I’m usually not a breakfast person.
Except on the weekends.. I’m all about eggs & bacon!
But alas I’m usually rushing out the door for work on the weekdays… and two cups of coffee later Im starving.
So I’m trying to get better and bring breakfast with me. I usually cook quinoa a couple nights a week, and we have so much leftover. So I decided to whip up a healthy on the go breakfast.
Wisk all the wet ingredients together.
Next add your dry ingredients, and mix together. It looks delicious huh?! (sarcasm.. here)
I also added a couple of handfuls of chopped walnuts.. it just needed a little extra something.
Pour your quinoa mixture into a casserole dish. I used a 9×9 glass dish. And sprinkle with a little more cinnamon. Then bake at 350 degrees for about 30 minutes.
Once your quinoa is cooked.. let it cool then slice it into bars. You can eat them immediatly or wrap them up and store in the fridge for a quick breakfast on the go! Super easy & delicious!
Cinnamon Quinoa Breakfast Bars
-2 cups of cooked quinoa
-1/2 cup of milk
-2 tablespoons of cinnamon
-1 tea spoon of vanila
(optional) – walnuts or pecans
Preheat oven to 350 degrees. Whisk all your wet ingredients together, then add your dry ingredients. Pour into a 9×9 baking dish. And bake for 30 minutes. Let cool then slice into individual bars. You can eat immediatly or you can wrap them individually in saran wrap and place in a large ziploc bag. The perfect on the go breakfast. You can eat them cold or pop them in the microwave for about 20 seconds. Enjoy!
