Spaghetti Squash & Chicken Dinner

So if you’re like me maybe you’ve wanted to try Spaghetti Squash but didn’t know how.
Don’t be intimidated it is seriously so easy! And delish!
Bonus its a veggie and less calories than typical pasta.. SCORE!

I chose to serve mine with a  side of asparagus and mushrooms, but you could easily do a salad for a quick dinner.

Spaghetti Squash & Chicken Dinner
-1 whole spaghetti squash
-Mrs. Dash Original
-2 chicken breasts (depending on serving size)
-yellow tomato
-green onions {chopped}
-olive oil
-half a cup of mushrooms {sliced}

Cooking Steps:
1.Cut your spaghetti squash in half.
2. Lightly cover each half of your squash (face up) with olive oil & Mrs.Dash seasoning.{see picture}
3.Bake for 30 minutes at 400 degrees {until soft}
4.While your squash is baking, sautee your chicken in olive oil in a pan on medium heat, until cooked thoroughly.
6. In separate pan, sautee your asparagus and mushrooms {on medium heat} for about 7 minutes.
{You don’t want to overcook your asparagus or it will get soggy, and nobody likes soggy asparagus}
7.Once all your items are cooked, simply using a fork, pull out your squash {should come out very easily and will look like noodle}.
Place squash on plate, top with sliced chicken and {uncooked} yellow tomato. Top with chopped
green onions.
8.Finally add your asparagus and mushroom side to the plate.
