Sweet Potato & Chickpea Cakes {Clean Eating}

I really should have named this post “The night I cried over Sweet Potatoes”! HaHa 
Let me start off by saying these sweet potato & chickpea cakes took me literally like 2 hours to make!
Not because they actually take that long but because through trial and error I realized 1) my magic bullet doesn’t quite “blend” ingredients and 2) when cooking them on the stove, they stick to the pan like crazy! It’s much easier to cook them in the oven! Also it was just one of the nights where my precious little bundle didn’t want me to put her down, so you can imagine, trying to cook dinner with a fussy 4 month old was loads of fun 😉

After finally nailing down the best way to make them I cooked them again at my sisters the next night and they were super easy!
So don’t fret, they won’t take you as long as they took me HA!

This is where I started off so hopeful! Just throw all the ingredients in my magic bullet right?!

So alas I just mixed these the old fashioned way with a fork 🙂 But honestly it was still super easy, I should have just mixed them in a bowl from the get go!

This is where mistake #2 happened 🙁 Cooking them on the stove was a hot mess. They kept sticking to the pan, and the bottom would be cooked but the top and middle were still super mushy.

But finally (and I don’t have a picture because I was totally over them at this point! HAHA) I just cooked the patties in the oven at 350 for 30 minutes. OMG way easier!! And to my pleasant surprise they were flipping amazing!! I may have made them 2 nights in a row!

As mentioned above you can cook these cakes on your stove top in a pan at medium heat BUT I found out {the hard way} they cook WAY easier if you bake at 350 in the oven for 30 minutes. Then Broil for 5 minutes, till the top is crispy.

Sweet Potato & Chickpea Cakes

Ingredients Needed:
-1-2 Sweet Potatoes
-1 can of chickpeas {low sodium}
-half an onion
-Mrs.Dash for seasoning
{OPTIONAL} – Greek Yogurt + Ole Bay Seasoning for Topping

1.Boil or Steam your potatoes till tender.
2. Cube cooked Sweet potatoes {leave skin on}
3.Add the remaining ingredients: Chickpeas, diced onion, 1 teaspoon of garlic, seasoning.
4.Blend all ingredients, using blender or mix by hand in a bowl.  Next make palm size “cakes”.
5.At 350 degrees bake patties for 30 minutes, then BROIL for 5 minutes till the tops gets crispy.
6.{optional} Mix in a small bowl, greek yogurt {plain} with seasoning {Mrs.Dash or Ole Bay} 2 teaspoons.
7.Drizzle Yogurt seasoning on top of Sweet Potato Cakes.

Makes 6-8 Sweet Potato Cakes.
