Buffalo Chicken Pasta {Clean Eating}

I made this Buffalo Chicken Pasta recipe a couple weeks ago and have been craving it ever creenince! It’s a def a fave at the Haley House! My husband LOVES it almost as much as I do! I love that its SUPER easy and quick & delish!

I made my Crockpot Buffalo Chicken ahead of time for my meal prep while doing Jamie Eason Live Fit Trainer. So it was super easy to just add it to the pasta for dinner. I love that the greek yogurt sauce cools down the kick of the buffalo flavor.

Crock Pot Buffalo Chicken
I recommend making your Buffalo Chicken 1 day before. I made mine in the crockpot using the following recipe: 3-4 Chicken breasts (frozen OR thawed). Place chicken in crockpot, ADD 2 cups of Franks Buffalo Sauce & 1 cup of water. Cook on LOW in your Crockpot for 6 hours. AFTER 6 hours, remove your chicken, shred by hand with a fork,place it BACK in the crockpot. Cook for an additional hour.

I eat the shredded chicken on salads or with lettuce wraps, topped with plain greek yogurt. It’s delish! But if your craving some carbs, the pasta is the perfect addition!

Buffalo Chicken Pasta
Ingredients:
-Precooked Buffalo Chicken {see above steps}
1 box of whole wheat pasta
desired veggies:
-1 cup of broccoli (raw)
-half cup of mushrooms (raw)
-1 sliced onion(raw)
-1 tb of olive oil
-1 tsp of chopped garlic
Greek Yogurt Sauce:
-5-6 TB of plain greek yogurt
-1 TB of franks buffalo sauce
-Mrs.Dash seasoning
-Ole Bay seasoning

Directions:
-Cook your pasta according to directions. Set aside.
-On medium heat in a sautee pan, add your olive oil & garlic. Sautee for 1 minute. Add your sliced onion, cook for 5-8 minutes (until translucent.)
-Once your onion is cooked through, add your broccoli & mushrooms. Cook for an additional 5 minutes. You want the broccoli to be soft BUT NOT mushy. -In a small sauce pan on medium heat, add your greek yogurt & buffalo sauce. Stir to combine for 3-5 minutes. Now add your shredded chicken to the sauce pan. You can add MORE or less sauce to the chicken, till you reach your desired texture. I preferred mine with just a little of the sauce.
Once everything is cooked through, add your cooked pasta to the veggie pan. Stir everything together. Dish up your veggie pasta on your plates & top with your shredded chicken & sauce.
