Carrot Cake Protein Cupcakes {Clean Eating}

This Carrot Cake Protein Cupcake recipe is adapted from Jamie Eason’s Carrot Protein Bar recipe. You can find the original recipe HERE.
I love the protein bars, but there is something so fun about a “protein cupcake”!
I’ve based this recipe off of Jamie’s, but tweaked it to create cupcakes with greek yogurt “icing”.

I have a MAJOR sweet tooth, like great white shark size!
So these cupcakes are the perfect healthy treat!

Carrot Cake Protein Cupcakes
Cupcake Ingredients:
-1 cup oat flour
-2 scoops vanilla whey protein
-2 tsp cinnamon
-1/2 tsp baking soda
-1/4 tsp salt
-1/8 tsp allspice
-1/8 tsp nutmeg
-4 egg whites (or 2 whole eggs)
-3/4 cup Splenda, Truvia, or Ideal
-8 oz. baby food carrots {OR PUREE YOUR OWN CARROTS}
-4 oz. water

Steps:
1.Preheat oven to 350 degrees.
2.Puree your carrots, boil one cup of carrots until tender, then mash by hand or puree in a blender, may need to add 2 tb of water until desired consistency.
3.Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda and salt together in a bowl.
4.Mix egg whites, Splenda, baby food carrots and water (optional) in a bowl.
5.Add wet ingredients to dry ingredients and mix together.
6.Spray glass pyrex dish with non-stick butter spray.
7.Pour ingredients into muffin tin.
8.Bake 20-30 minutes.
9.While your muffins are baking, prepare your icing.

Greek Yogurt Icing Ingredients:
-half a cup of greek yogurt {plain}
-2 TB of honey
-sprinkle of cinnamon
-1 scoop of Vanilla Protein Powder
-shredded carrots

Final Steps:
Once your muffins have cooled, mix your icing ingredients and top those badboys!
Enjoy!

    Hi Alesha…I LOVE following you and your progress. I’m interested and trying to start doing Jamie Eason and 21 day fix. Just needing my willpower and motivation to come back. I made these, but how would you count them for the 21 day fix? Unfrosted.
