Zucchini Boats {clean eating recipe}

One of my favorite recipes, is Ground Turkey stuffed Zucchini Boats. Since I am still doing Jamie Eason’s Live Fit program, I have to think of ways to have a “low carb” or even “no-carb” dinner. I get a little tired of just a big ole side of veggies, so I try to sprinkle a little veggie magic to the dinner mix! I ate mine with a side salad. Was really delicious!
You know me, I love a quick and easy dinner! Ain’t nobody got time for hours in the kitchen when you have a wild 6 month old! HA

Ground Turkey Stuffed Zucchini Boats

Ingredients:
-1 lb of ground turkey
-4 whole zucchini (raw)
-1 TB of olive oil
-Mrs.Dash {low sodium}
-diced tomatoes
{optional}
-Greek Yogurt + Ole Bay for topping

Steps:
1.On Medium Heat cook your ground turkey. Season with the Mrs.Dash or desired seasoning.
2.While your meat is cooking, scoop out the inside of your zucchini.
{Cut in half, then using a spoon scrape out the zucchini “flesh”. Leaving a think layer left.
3.Once your meat is cooked through, fill your Zuchinni boats.
4.Bake at 350 for 25 minutes, or until Zuchinni is softened.
{Optional}
5.Once baked, top with diced tomatoes, and Greek Yogurt drizzle.
