30 second Blueberry Protein Muffin – 21 day fix approved

Okay guys so this is the start of my second week of the 21 day fix. I still have SO MUCH blogging to catch up on! Will post my Jamie Eason recap this week, I PROMISE!! And I’ll be posting my very first WEEK ONE 21 day fix recap too! My etsy store has REALLY taken off! I get about 25 orders a week now, and between that, my 21 day fix group, being a stay at home mom to a very busy 8 month old, I don’t really have a lot of free time! haha My poor netflix que hasn’t been touched in weeks!
Alright enough about me, I made this delicious and quick breakfast last week.

Ingredients:
-half a cup of blueberries
-2 TB of greek yogurt (plain)
Shakeology (Chocolate)
Or desired protein powder
-Drop of Vanilla Extract

Steps:
1.Spray a coffee cup or ramekin with nonstick spray.
2.Combine 1 egg with half scoop of shakeology or desired protein powder & a little vanilla extract & handful of blueberries.
3.Microwave for 30 seconds then top with Greek yogurt & more blueberries!
For those doing the 21 day fix.

*Equals out to about one red (egg, Greek yogurt & protein powder) & one purple (blueberries).
