Cornbread {Clean Eating} recipe – Fresh from Florida

Okay so I made some Sausage & Kale soup this week and really wanted some cornbread to go with it! I have never made cornbread from scratch so I was really excited to try it! You guys know that I am always coming up with clean eating recipes for some of my favorite foods! I recently learned about the Fresh from Florida campaign & was contacted to feature their produce of the month! This month’s featured produce is Sweet Corn.

So once I bought my sweet corn, I peeled and washed it. Then I grabbed my other ingredients for my cornbread. Cornmeal, oat flour, unsweetened applesauce, and 2 eggs. ALSO *not pictured was 2% milk, and baking powder. corn_ingredientsI started by shucking my ears of corn. I used a knife and just scraped all the corn off the ear. Then I mixed ALL my ingredients in a bowl, and poured into a baking dish. Popped in the oven at 350 for 30 minutes. corn_bread2 And voila! The cornbread came out looking so YUMMY! It was SO easy to make and will def add it to my recipe wheelhouse. cornbread_sliced I served my cornbread with my homemade kale & sausage soup (recipe coming soon) and my husband and I both LOVED it.

cornbread_final Cornbread Ingredients:

-2 ears of corn -1 cup of cornmeal -1 cup of oat flour -half a cup of 2% milk -2 eggs -1 teaspoon of baking powder -1/4 cup of applesauce

Steps:

-Remove corn from ears. -Combine ALL ingredients in bowl, mix well. -Pour into 8×8 baking dish. Bake at 350 for 30 minutes.
