Okay so I made some Sausage & Kale soup this week and really wanted some cornbread to go with it! I have never made cornbread from scratch so I was really excited to try it! You guys know that I am always coming up with clean eating recipes for some of my favorite foods! So once I bought my sweet corn, I peeled and washed it. Then I grabbed my other ingredients for my cornbread. Cornmeal, oat flour, unsweetened applesauce, and 2 eggs. ALSO *not pictured was 2% milk, and baking powder. I started by shucking my ears of corn. I used a knife and just scraped all the corn off the ear. Then I mixed ALL my ingredients in a bowl, and poured into a baking dish. Popped in the oven at 350 for 30 minutes. And voila! The cornbread came out looking so YUMMY! It was SO easy to make and will def add it to my recipe wheelhouse. I served my cornbread with my homemade kale & sausage soup (recipe coming soon) and my husband and I both LOVED it.
-2 ears of corn -1 cup of cornmeal -1 cup of oat flour -half a cup of 2% milk -2 eggs -1 teaspoon of baking powder -1/4 cup of applesauce
-Remove corn from ears. -Combine ALL ingredients in bowl, mix well. -Pour into 8×8 baking dish. Bake at 350 for 30 minutes.
