21 Day Fix – Week 2 – RECAP

Okay so ya’ll ready for my 21 day fix WEEK 2 recap?! I’m really LOVING this program! I can’t believe its only 3 weeks, it’s so refreshing to have something that is so quick! Don’t get me wrong, I believe in living a heal thing lifestyle BUT I also love having a short commitment to a workout program, and then I can repeat it as many times as I need! If I have a vacation coming up or know I will SUPER busy with family stuff coming up, then I can just squeeze in the 21 days before hand!

Okay so week 2, I’m down 2 more lbs!! That makes 4 lbs so far! I’m really happy with that! I had a personal trainer tell me one time that 1-2 lbs per week is perfect for losing weight, and it allows your body time to adjust and will be easier to maintain. AND as you’ll see in a second, I had some CARROT CAKE & WINE this weekend and guess what?! I still lost weight!!

21 DAY FIX Food:
So for this week I didn’t PREP all my meals but I mainly just did snacks and lunches. I LOVED my buffalo shrimp lettuce wraps from last week so I made them again! I also made some baked chicken and spinach salads, and not pictured was my shakeology post workout shake, and my greek yogurt and blueberries for snacks!

I topped my buffalo shrimp wraps with feta cheese, greek yogurt and shredded carrots. SO YUMMY! Will post the recipe soon!


So breakfast for week 2 were kind of all over the place! HA I woke up craving scrambled eggs Monday morning and realized I totally forgot to buy them! So had to quickly come up with a 21 day fix approved breakfast! Slice of ezekial toast, half a banana, some strawberries and turkey bacon! YUMO!


Finally when I went and got my eggs I kept with them the rest of the week!
*For those that have asked, I use the colored containers only to measure the proper portions of my food. I still track my food on My Fitness Pal and I still eat around 1800 calories a day, but I use the containers to measure ALL my food first!

As I mentioned before I drink my shakeology as a post workout! I really LOVE the chocolate flavor, I mix it with one banana, and one teaspoon (yes you read that right, one tiny tiny teaspoon) of peanut butter 😉 and some water, ITS SOOOOO GOOD! Taste like a thick milkshake, I love it! One thing that I have really noticed a difference since drinking shakeology, I’ve been drinking it for a couple weeks now (5  weeks) is I have WAY MORE energy! I always heard that but I wasn’t sure it would actually happen. I eat really healthy and still found myself SO TIRED all the time! YES Annabelle is still up a couple times a night but I was still really exhausted every day. And since drinking shakeology I can really tell I just wake up with more energy. And if this busy momma has more energy its totally worth it! I also feel like it really helps with my chocolate / sweet fix. I love anything sweet, so sometimes I’ll mix it with some greek yogurt for a late night treat, and its so yummy! I only share products that I am extremely passionate about and that I really recommend, I like to think of my blog like a conversation with friends. If I wouldn’t recommend a product to my friends, I won’t post about it. I think its SO IMPORTANT for me to be 100% honest with you guys and share fun new products that I personally LOVE! 


 So what I lacked in meal prep this week, I made up for in yummy dinners! One night I made flatbread pizzas, literally only took a couple minutes to throw together and they were SO TASTY! Will post this recipe soon too!

21 day fix pizza
I paired our pizza with a spinach salad and it was delicious! I LOVE that I can have bread and cheese doing the 21 day fix. I feel like the food part is SO VERY maintainable! Once you get the portions down and the amount of each food group, it makes it really easy to learn how to eat healthy food in the right portions.
I also made lasagna one night, can you tell I was all about the cheese this week?! I made a ground turkey and spinach lasagna and then used my GREEN container to measure the right portion size.

I paired our lasagna with a spinach salad and it was surprisingly filling. I was a little sad when my lasagna piece looked so small! HA Guess I’m used to budget portion sizes LOL But honestly it was the perfect amount! I didn’t feel super full after or starving.

21 day fix WORKOUTS : WEEK 2
Yep, the workouts were still tough! David and I even worked out at the same time a couple of days. Of course in different rooms of the house! HA We learned a long time ago we do better working out on our own but still cheering each other on. This was my attempt to have David take a workout selfie, he was not amused 😉 
But I got in ALL the workouts this week! I def find it’s harder to workout on the weekends. So I doubled up on Friday so I would have Sunday as a rest day 🙂

Another Transformation tuesday for ya! Love seeing the changes in my body. I have gone through such a fitness journey, losing 30 lbs, then getting pregnant, gaining 30 lbs and now 8 months post partum back down to my pre pregnancy weight. I can’t wait to see another progress pic next year! 
So remember I told you I ate CARROT CAKE & had wine and still lost weight this week?! YEP! I went on a pre-mother’s day sister date and we had the best best time! I ordered the carrot cake and couldn’t believe it was the size of my head! HA I could only eat about a quarter of it, it was so delicious! I saved the rest and brought it home to David, he was pleasantly surprised 🙂

This was the first dessert I have had in about 3 months and it was AMAZING! Do you ever have a treat meal and are disappointed because it wasn’t that good?! NOPE this wasn’t one of those times! HA it was TOTALLY WORTH IT! I have learned over the years how important it is treat yourself and enjoy life and that means yummy food too! Everything in moderation and save it for a really fun occasion!

PS this was NOT 21 day fix approved LOL Just have to throw that out there 😉


Had such a great time with my BFF! I made her branch out and try Vietnamese food for the first time, I don’t know if she was sold, but I really LOVE it! Spring rolls and Bowl of Pho is my happy place! So delish!


ALSO it was a BIG weekend, because I celebrated my first Mother’s day!! After years of struggling with infertility, it was so special to finally celebrate Mother’s day with my little one! You can read more about our pregnancy journey HERE.
Of course we had to have some pool time with my sweet mom and family! Annabelle just loves the pool! She’s a little pond frog as my dad calls her! HA She just kicks and kicks in the pool! So blessed to have these sweet ladies in my life!

    Hi there,:) I found your site randomly searching for advice on the 21 day fix. I’ve stalled out on it twice over the last 6 months but I’d really like to commit to it. My 10 year reunion is in May and after having a baby last year, I’m motivated to get back into shape! I’m not much of a cook but your recipes look easy and delicious. Could you please send me more?
