Kale & Sausage Soup {Clean Eating}

So this recipe is perfect if you’re doing the 21 day fix like me OR you are just trying to have a healthier version of my favorite Zuppa Toscana from Olive Garden! What makes this a healthier version, is number one no butter! LOL But also using just a little bit of milk, instead of a heavy cream. You could also substitute regular milk for coconut milk and that would make it really delish too! I paired my soup with some homemade cornbread, you can find that recipe HERE.

So first things first, you want to sautee your onions. I added a clove of diced garlic and sautéed it with my onions on medium heat for about 8 minutes. I love the way the onions and garlic smell!!

Next, scoot your onions over and add your sausage. I love the organic sweet italian sausage (Greenwise brand from Publix). I just slice a hole in the sausage casing and squeeze it into the pan. It’s a very glamorous process 😉 You could also just buy the ground sausage, would probably be easier LOL

Once your meat is cooked just turn the pan off and set it aside. Next I chop my kale & wash it, if its not already pre-washed.
Turn your crock pot on and add your Chicken broth, milk & your kale.

Next slice your potatoes. Since I’m doing the 21 day fix, I wanted to save my carbs for the cornbread LOL so I still made the soup with potatoes, I just didnt put any in my soup.

Once your potatoes are washed and sliced, add them to the crockpot. Next add  your garlic, sausage and onion mixture.
Keep the crockpot on LOW for 8 hours, if you are cooking early in the morning OR HIGH for 4-6 hours (long enough for your potatoes to soften).

I served mine with a side of homemade cornbread, was such a yummy dinner! And I loved that it was easy clean up!
You can find my Cornbread Recipe HERE.

Sausage & Kale Soup
-1 lb of Organic Sausage (I prefer the Greenwise hot italian)
-1 bag of Kale (2 bunches of kale)
-2 whole white potatoes
-one onion (sliced)
-1 clove of garlic sliced
-2 cups of low sodium Chicken Broth
-1 cup of 2% milk OR 1 can of coconut milk

Sautee your onions and garlic on medium heat for 8 minutes or until translucent. Next brown your sausage. While your meat is cooking add your chicken broth and milk to your crockpot. Turn it on LOW. Wash and dice your KALE, add to the crock pot. Next slice your potatoes and add to the crockpot. Once your meat is fully cooked add to your crockpot and turn on LOW for 8 hours OR HIGH for 4-6 hours if need to make it fast.

If doing the 21 day fix this counts as ONE red, ONE green, ONE yellow (cornbread) and possibly two yellows if you do ADD the potatoes to your serving. I left the potatoes out of mine, but added them to my husbands.

*you could also add some sliced turkey bacon for extra flavor!
