Today starts Round 3 of my 21 day fix! I didn’t have a TON of time to meal prep yesterday, so I just made some super easy baked chicken and veggies! You can also use this same recipe for fish, just lower the cooking time.
Sprinkle some Teriyaki marinade on top! And FOLD your packets closed.
Pop them in the oven and bake for 60-70 minutes or until done. The awesome thing about the foil, is the veggies get nice and steamed and all the flavors really soak in together, and its NO CLEAN UP!! SCORE!
After 40 minutes, I opened my packet to see if it was done and the chicken still needed some time.
So I popped it back in the oven for about 30 minutes. And then it was perfect! The chicken was SUPER moist and all the veggies were steamed perfectly.
Chicken & Veggies in Foil
-Pack of fresh asparagus
-2 chicken breasts (can double if need)
-1 sweet potato
-1/4th a cup of teriyaki sauce
-Spray foil with non stick spray. Layer with sliced sweet potatoes (make sure to measure them using the yellow container) then add asparagus (10 asparagus is one green) Top with chicken, mushrooms & some teriyaki marinade. Sprinkle with Mrs.Dash or desired seasoning. Fold into packet, bake at 375 for 60-70 minutes (until chicken is cooked through. Voila!! Super easy & no clean up!!
You can also do this with fish! I made some tilapia ones too, just lowered the cooking time to 15 minutes.
