Teriyaki Chicken in Foil (21 day fix approved)

Today starts Round 3 of my 21 day fix! I didn’t have a TON of time to meal prep yesterday, so I just made some super easy baked chicken and veggies! You can also use this same recipe for fish, just lower the cooking time.

Make sure to measure your carbs using your yellow container.

Then layer your asparagus on top. 10 asparagus is equal to ONE green container

Next add your chicken, season with salt & pepper. and Top with mushrooms.

Sprinkle some Teriyaki marinade on top! And FOLD your packets closed.

Pop them in the oven and bake for 60-70 minutes or until done. The awesome thing about the foil, is the veggies get nice and steamed and all the flavors really soak in together, and its NO CLEAN UP!! SCORE!

After 40 minutes, I opened my packet to see if it was done and the chicken still needed some time.
So I popped it back in the oven for about 30 minutes. And then it was perfect! The chicken was SUPER moist and all the veggies were steamed perfectly.

Chicken & Veggies in Foil
Ingredients:
-Pack of fresh asparagus
-2 chicken breasts (can double if need)
-1 sweet potato
-mushrooms
-1/4th a cup of teriyaki sauce
-Mrs.Dash seasoning

Steps:
-Spray foil with non stick spray. Layer with sliced sweet potatoes (make sure to measure them using the yellow container) then add asparagus (10 asparagus is one green) Top with chicken, mushrooms & some teriyaki marinade. Sprinkle with Mrs.Dash or desired seasoning. Fold into packet, bake at 375 for 60-70 minutes (until chicken is cooked through. Voila!! Super easy & no clean up!! 

You can also do this with fish! I made some tilapia ones too, just lowered the cooking time to 15 minutes.

21 day fixers, ONE packet is two green, one yellow, and one red.

    This looks soooo delicious! I’m currently Live Fit training right now, but I don’t see why this wouldn’t be a great recipe to use. Thanks so much for sharing! I’m not a great cook so I always lack creativity when it comes to spicing up my breasts and fish. You give me hope. 🙂

    Is this a good meal for Meal Prepping on the 21 Day fix ? I am looking for easy ideas for the meal prepping and this looks SO good.. But I am quiet literally always on the run.. So breakfast lunch and dinner has to go with me. Lol

    Hello! Do you use a specific oz of chicken breast per serving? Or do you just cut it up and measure in your container after its done?

    In the description, you said you cooked it for 30 minutes but in the recipe it says to cook for 60 minutes. Which is correct?

    I don’t mean to be rude but I made this last night and the chicken was terrible. The marinade did not flavor the chicken at all and the texture was really off. Very disappointing!

      Oh no!! Ive had made it so many times and never had that issue.. How long did you cook your chicken? And how much marinade did you use?

    This was so easy and delicious! Literally took me only 10 minutes to prep and aside from cutting board & knife, zero clean up!! Used salmon one night and swordfish another – baked for 45 minutes. Thanks for sharing, definitely going in our rotation!
