Easy Peasy Chicken Salad {Recipe}

I made a goal this month to branch out with my food. So I am trying lots of new recipes and SO FAR SO GOOD!! I made a super easy {21 day fix approved} Chicken salad and it is delicious!

I also made another goal to get back to prepping my food EVERY WEEK! No more just winging it, I really want to get back to prepping all my food and tracking EVERYTHING! So this week I made chicken salad for my lunches and even though I work from home, I went ahead and separated them and placed in tupperware so everything is grab and go!

21 day fix Meal PrepI typically am not really a chicken salad person, BUT I used greek yogurt instead of mayo and having grapes made it a little sweet and I have to say I am now a huge fan!
This literally only took about 15 minutes to throw together and BAM I have all my lunches for the week!

Chicken Salad
{21 day fix approved}

-2 chicken breasts
-half a cup of sliced grapes
-half a cup of diced celery
-half a cup of greek yogurt
-desired seasoning (I used Mrs Dash and pepper)

First you will want to shred your chicken. I boiled mine in a pot of water for about 10 minutes, then I remove the chicken, shred with a fork and place in a bowl. Next add everything else! And mix well, you can add more or less yogurt depending on your taste. You could also add a little lemon juice if you want.

Thats it! Its so easy! And then I have been eating it as my lunch with some spinach, tomato, feta and balsamic dressing! SO good and flavorful!
