Buffalo Chicken Pizza {21 day fix approved}

Pretty much any night of the week I could eat pizza and never get sick of it! Like it’s a problem. BUT now that I am doing the 21 day fix I DO get to eat pizza any night and not feel guilty LOL. I whipped up these super yummy tortilla buffalo chicken pizzas and they were a HUGE HIT! My husband even said “MMMM thats really good!” during dinner, I tried not to make a big deal about it, but inside I was freaking out! HA Sometimes he’s not fan of my “healthier” versions so when something works for both of us, its a keeper!

Also this recipe can really be adapted for ANY kind of pizza! You can do just veggies, bbq chicken, sausage, you name it! These are so simple and ONE whole tortilla counts as 1 yellow (21 day fix), so YEP you can eat the whole thing! We only had two pieces each with a side salad, then I have leftovers for the next day!

For the chicken I always try to marinate it ahead of time so it really soaks up the flavor, but if you are in a pinch, just skip that step. I diced my chicken breast, added some minced garlic, parsley and about half a cup of buffalo sauce in a baggie. I put it in the fridge for about 1 hour before cooking.


To assemble my pizza, I used whole wheat tortillas, I actually like that they are thin, it makes it seem like a thin crust pizza! I also used pesto on one pizza for the sauce and marinara on the 2nd one, I wanted to see which one I liked better. PS I preferred the marinara with it!

When you are ready to begin the flavor expedition, start cooking your chicken! On medium heat I emptied the bag of chicken and let it cook for about 10 minutes. Once it was cooked all the way through I turned up the heat to get rid of all the “juice” I didn’t want soggy chicken to make the crust soggy.

So this recipe made two pizzas, but you can totally just do one for yourself if you are selfish like that! HA Because I promise you won’t want to share it! Once my chicken is cooked through I set it aside. For each tortilla I added about 2 spoonfuls of sauce, can use marinara or pesto. Then I topped with mozzarella cheese (use blue container to measure if doing the 21 day fix) and honestly a little goes a long way! Then I added some spinach leaves and then topped with the chicken!

Bake at 400 for 6-7 minutes. Because the tortillas are so thin, they crisp up, so watch them and make sure you don’t over cook it.

While that’s cooking I whipped up a skinny ranch dressing! Using one container of greek yogurt (its super high in protein) I mixed 1 teaspoon of the ranch packet seasoning and added some water to thin it out! This was SUPER yummy! It adds a nice zesty kick to the pizza and balances out some of the heat of the buffalo.


Once your pizzas are cooked you can top with the skinny ranch sauce! I put mine in a baggie and then “piped” the pizza because I am OCD like that and I like my food to look pretty.

Let’s all just take a minute and appreciate how beautiful this is! I mean the sauce, the cheese, the chicken.. OMG its so good!


David and I had a very romantic meal that we pretty much didn’t talk because we scarfed it down in 2 seconds LOL
We each ate two pieces and then a side salad. It was super filling and I was proud of myself for not eating BOTH pizzas! But like I said because the tortillas are thin, one whole pizza is 1 serving.

Buffalo Chicken Pizza
{21 day fix approved}

-2 chicken breasts (raw)
-half a cup of buffalo wing sauce
-1/2 cup of mozzarella cheese (if cooking TWO pizzas)
-2 whole wheat tortillas
-2 TB of marinara sauce OR pesto
-handful of spinach
**optional minced garlic & parsley flakes

Skinny Ranch Sauce:
-1 7 oz container of plain greek yogurt
-1 tsp of ranch seasoning packet
-2 teaspoons of water (or more)

#1. Dice your chicken breasts and place in a baggie, add the buffalo chicken sauce, minced garlic and parsley flakes.
Let marinate in fridge for 1 hour. #2. On medium heat in a sauté pan add your chicken, cook for about 10 minutes or until cooked through and slightly brown (try not to move it around too much). #3. While chicken is cooking, assemble your pizzas, take tortilla and top with marinara sauce OR pesto (don’t add too much or it will get soggy). Next add your cheese, spinach and then finally the cooked chicken. #4. Bake at 400 for 6-7 minutes (keep an eye on it so the edges don’t burn.

*Optional skinny ranch sauce:
Mix together the plain greek yogurt and 1 teaspoon of ranch seasoning packet. Slowly add the water until desired thickness is reached. Add extra parsley if prefer.

1 pizza is ONE serving on 21 day fix.
Equals:2  yellows, 1 blue, half green, 1 red, 2 teaspoons

PS if you use SMALLER 6″ whole wheat tortillas one pizza is ONE  yellow instead of two
