Honey Lime Chicken Tacos with Cilantro Slaw

Is it possible for 1 ingredient to inspire a whole meal? I feel like I’m on the food network Chopped Y’all! haha
So first of all I could do a whole blog post about Trader Joe’s! OMG have y’all been?! Its life changing! Okay maybe thats a bit dramatic, but its definitely AMAZING & they have some awesome gems!!! Like this Cilantro Lime Salad dressing.. I may or may not have gone through almost the entire bottle this week LOL. But its SOOOO good!!! I am a HUGE sucker for anything cilantro, so I was inspired to make some yummy tacos with it!

First of all don’t get this dressing, because you will crave it, wake up thinking about it and put it on everything. Even cereal!! Jk about the cereal, but for real it goes with everything! Anyway this was my first time at Trader Joe’s and I was pleasantly surprised! I think I thought everything was going to be expensive because alot of it is organic or more natural items.. BUT thats not the case! Its very reasonably priced, alot of their items are like HALF the price of publix! I got 5 bananas for $1.00! I was pretty proud of that! LOL

They also have a GREAT selection of meats, produce, herbs and a TON of amazing dressings, oils, spices and cheese!! I went on a Saturday, which was a mistake haha because everyone and their mom was their and I was like a deer in headlights with Annabelle pointing to all the people and growling like a tiger 😉 Oh its just so fun shopping with a spunky little 1 year old. Did I mention they have free wine tastings?! HAHAHA

I definitely noticed they have an amazing selection of gluten free items too! I don’t always do gluten free, but sometimes for pasta or chips I like to do that option, and they had SO MUCH!!! I really want to find someone to watch my kid so I could aimlessly wander the aisles. I will be going back and really taking my time to see more of what they have and seeing what else inspires me in the kitchen!

Enough about my shopping adventures y’all really want to know how I made these tacos right?!

Honey Lime Chicken Tacos with Cilantro Slaw
{21 day fix approved)
-2 raw chicken breasts
-1 TB of honey
-1 TB of olive oil
-2 limes
-garlic (minced)
-fresh cilantro
-1 cup of (plain) coleslaw or chopped cabbage
-1 ripe avocado
-corn tortillas
-Trader Joe’s Cilantro dressing **optional but its really not

So the first thing you want to do is marinate your chicken. This is key, because it really allows the flavors to mingle and be that much more delicious when you eat the tacos. Overnight is best, BUT I didn’t have time to wait, so I just did 1 hour in the fridge. I combined, some minced garlic (didnt measure) about 2 sprigs of cilantro, honey, and the juice from 1 lime in a bowl. Mixed together and put in a ziplock baggie. Next I sliced my chicken thinly into strips and added it to the bag, shook it up and placed into the freezer for an hour.

Next make your slaw, combine the plain cabbage OR package of plain coleslaw with about 2-3 TB of the dressing. I also added some plain greek yogurt to thicken it up, but that is personal preference. Squeeze about half a lime into the slaw and set aside.
Once your chicken is marinated, on medium heat add 1 tb of olive oil to a non stick pan. When hot, add your chicken, throw away the bag with the marinade. Let the chicken sit for about 5-6 minutes until it gets a nice browning on one side. Then flip and cook all the way through.

Next assemble your taco, I used corn tortillas but you could use any tortilla. Add a spoonful of the chicken, top with the cilantro coleslaw, fresh sliced avocado, throw some cilantro on that bad boy and EAT UP!! Oh and I drizzled some more of the dressing over top because I am obsessed like that. Enjoy y’all!

2 tacos is one serving, and for the 21 day fix, counts as 1 yellow, 1 red, 2 teaspoons, 1 blue, 1 green.
