Week 6 – 21 day Fix (2016 Recap)

Okay you guys, today marks completing TWO rounds of the 21 day fix!!! WOO HOO!!
I am so dang proud of myself! It hasn’t been easier BUT it has gotten easier with every day!
I really can’t believe I’ve stayed consistent for 6 straight weeks, NO CHEATS!

Weightloss Update:
I am down one lb this week, so that makes 8 pounds so far. I honestly thought it would be more, BUT this week I really pushed myself in my workouts & I said no to some AMAZING desserts! So I will take those for a win!


Meal prep this week was pretty simple extra lean ground beef lettuce wraps with corn, tomatoes, greek yogurt and salsa. It’s seriously so easy and taste so good! I was getting sick of buffalo chicken LOL so I branched out.


For the ground beef I just sautéed some onions until transluscent and then added the ground beef. Let it cook through on medium heat, then added in about 2 TB of low sodium taco seasoning (not the whole packet) and about half a cup of water. I let it simmer for about 10 minutes and thats it! OH and I bought these little sauce containers from walmart so I can heat up my lunch but have my dressings cold 🙂 I love that I can wash them out and reuse them 🙂


Breakfast this week was pretty much just scrambled eggs OR a shake, but on Saturday David made eggs and french toast! I am usually the cook in the house, so its always a nice treat when he gets behind the stove 🙂


Dinners this week were kind of all over the board, but we had some good ones! On tuesday I didnt know what to make so I threw together a Chicken Sausage Veggie Fried Rice. It was SUPER tasty! Topped with a greek yogurt & buffalo sauce drizzle… YUMO!


I also came up with this pretty tasty ground beef taquito recipe for lunch one day when I was starving (I had a long run & didnt feel like my lettuce wraps) These are SOOO GOOD y’all!

Ground Beef Taquitos
I used whole wheat mini tortillas (2) microwaved for 30 seconds so they are pliable. Then just add filling, I had cheese, ground beef, corn. Roll up & face seam side down on baking sheet. Bake at 400 for 10-12 minutes.

They were SO GOOD I made them again for dinner BUT used chicken instead! I made a honey lime chicken version with black beans and spinach.. OMG you guys, delicious!!! Now I am kind of obsessed, I get that way sometimes. I just find something I like and I eat it every day until I hate it LOL BUT these are awesome, will def be eating them again!


They also just opened up a Winn Dixie by us and they have little tiny shopping carts! Have you guys seen them?! Annabelle LOVED it!! She was a wild woman running through the store grabbing stuff left & right LOL We had to put back the box
 of band aids, block of cheese and 5 apples before we check out.

Last week I went over to my sister in laws house and she made these AMAZING teriyaki meatballs, well I tried to recreate the recipe and I failed LOL I used ground beef instead of turkey and it just honestly was okay, but wasnt a huge hit. I need to reattempt them again! I did drizzle them with my buffalo / greek yogurt sauce so that makes everything taste better LOL


On sunday night I totally didnt feel like cooking, can you tell I’ve been tired this week LOL We’ve just been really busy. So I made a quick spinach & pesto pasta. SOOOO good!!! I’m a sucker for pesto and garlic! Was the perfect meal for the end of the week though 🙂


Enough about food, lets talk workouts. YOU GUYS, pretty much for the past 9 months I have had to do A LOT of the 21 day fix moves modified! Well this week I was able to do ALMOST all of them regular!! Thats HUGE for me!!! It really shows me that I am getting stronger! The Chest Fly / Leg Raise on Dirty 30 is such a struggle for me, but I did it this week without any modification and it felt great!! Also the side plank with leg lift is a FLIPPING HARD! Not going to lie, that one gets me every time and I usually just lay on my side and lift my leg. BUT this week I was able to do the whole move!! That is so exciting for me! As you guys know I am doing the 21 day fix at home workouts 3 days a week PLUS running 3 days a week too.


So this funny thing happened on Tuesday, I went for a 6 mile run and I got lost LOL I still can’t believe it, I went to this neighborhood I always go to BUT I decided to go a different route, at around mile 7 I was like man, I really thought this was a big circle?! Why am I at the highway?! LOL I totally missed my turn you guys and went about 2 miles too far!! So I had to back track and figure out how the heck to get back to my car! I ended up doing 11 miles!!! WHAT?! Okay so it totally wasn’t planned and I don’t recommend doing that, BUT honestly I felt pretty great! I am super slow and run 2 minutes then walk 1 minute BUT I still did it! And Annabelle did AMAZING!! She usually gets fussy after 30 minutes, but this week she did great! I was shocked!

So ya lesson learned, look at the map before you go out and run! LOL BUT I am still really proud of myself for pushing through AND I definitely want to do another half marathon now!



As per tradition, my dad and I went for a run on Saturday 🙂 We did 5 miles and felt great! I also finally got my pre workout & recovery supplements in and OMG you guys soooo good!! So I have only ever tried a couple pre workouts and I usually felt nauseas OR jittery, and I was like UM no thank you! BUT I def wanted to eventually try a different one. So when I heard Beach Body came out with a supplement line, I was all ears! I have to tell you, the pre workout is great so far! I don’t get jittery at all BUT it def helps during a workout!


It was also my mom and neices birthday this weekend so we had a girls night Saturday night then a family lunch on Sunday! Let me just say restaurants still make me nervous, for years I always equated eating out with indulging, and a celebration. So I still struggle with being consistent out to eat, It was my goal this year to stop emotional eating and to stay consistent. And I am SOOOOO dang proud of myself for sticking to my food even out at a restaurant! Saturday night I had mahi tacos from California Pizza Kitchen. OMG they were so good and I brought leftovers home. It felt really good to say NO to my “emotional eater” that wanted 5 pizzas and a big ole slice of cake LOL BUT I know its so crucial to prove to myself I can do this and that I am not missing out on anything by NOT eating that piece of cake. I am still having a great time and can enjoy friends and family.


We went to one of my favorite restaurants on sunday, the Floridian, you can check them out HERE. They have the most amazing menu, the work with local farmers and use only what is in season. Everything is SO FRESH and so tasty!! I had the Sunshine Salad with beets, butternut squash, candied pecans, blackened shrimp, strawberries and homemade strawberry dressing. OMG its amazing!!! A def must go to if you are ever in St.Augustine, FL!

So like I said this week marked 2 rounds of the 21 day fix, so I wanted to share my transformation so far!

So I measured my inches & took a progress pic. You guys!!! I’ve lost 18 inches & you can see a big difference in my midsection!

Here’s some non scale victories too:
-Stayed consistent for 6 straight weeks! NO CHEATS?

-Have gone out to 5 restaurants & stuck with healthy options ?

– Tracked all my food for the past 6 weeks?

-Able to do almost all 21 day fix moves unmodified ?

– Went from barely able to run a mile to doing an 11 mile run?

-Clothes are fitting better?

-Skin is clearing up, more energy, drinking Shakeology everyday ?

Don’t let the scale define your success! There’s SO MANY benefits to working out & eating healthy!!

    Hey if i can give you a little advice. ? You might see more of a weight loss if you dropped the corn.

    I love that you are doing a hybrid of running and 21 day fix. I’m going grocery shopping tomorrow and meal prepping Sunday. I’m planning on starting the hybrid model on Monday because I love my running and start training for my next half soon. I’m excited to see some results. I’m glad I found your blog, you are kick ass.
