Week 8 you guys! WHAT?! I can’t believe I have done two full months of 21 day fix workouts PLUS running AND tracking all my food! It feels so amazing! This week was a little crazy and I started getting a cold so I only worked out about 3 times BUT I focused on my nutrition and tracking my food.
I didn’t lose any weight this week, BUT I am still down 10 lbs total. Sometimes I feel like it should be more BUT I know I am losing inches AND more than anything I am creating healthy habits! I am enjoying my meal prep and am getting stronger with the workouts!
So last week (READ THAT HERE) I made this same meal, and it was just so good i knew I wanted to make it again! So easy and delicious! I made spaghetti squash with ground turkey meatballs, marinara sauce and steamed green beans.
Annabelle LOVED the spaghetti squash and meatballs too! She pretty much eats anything LOL so I know I can always share my leftovers with her 🙂
I get alot of questions about how long to store meal prepped food. For me I store all my food (5 days) in tupperware in the fridge. I never have any of it go bad in the five days. IF I let it go to the weekend, it usually starts to go bad. I always tell people if you feel like you are uncomfortable with that long, then just do 3 days worth and freeze the extra. You can always defrost or reheat later 🙂
Did I mention that I get obsessed with “themes” for food LOL I have been on this italian kick for weeks now and it’s just so good! I made a super easy and YUMMY 21 day fix Baked Zitti recipe last week too!
Cook noodles according to package directions, in a 9×13 casserole dish spread a layer of marinara sauce. Add a layer of whole wheat pasta, top with ricotta cheese & spinach, repeat laters. I added some ground turkey meatballs too (had them leftover from meal prep) Top with more cheese, tomatoes & spinach.
Use green container to approximate portion size, Serve with a big salad.
One serving equals 1 green, 2 yellow, 1 blue, 1 orange
One night I made asian ground turkey meatballs with sweet potato tots. OMG they were so good! You can use my asian meatball recipe from HERE. I use the Alexxia organic brand for the sweet potato tots, they are perfect for busy nights!
The next night I made chicken tacos using my favorite new mini whole wheat tortillas! I use the MISSION brand, I love that they are tiny (2 equals one yellow for the 21 day fix) I also made homemade guacamole and it was DELISH!!
Let’s talk dessert! I typically try to limit my 21 day fix desserts to once a week, but one night I just had this craving for ice cream. I previously found the Halo Top brand at Winn Dixie, I have heard great things from other bloggers so I wanted to give it a go! Its only 240 calories for the WHOLE container, it’s all natural, and no artificial sweeteners. I had about 1/4th cup serving size and topped it with chocolate & caramel sauce (Waldens International farm) with peanuts too! OMG it hit the stop and it was AMAZING! I traded in TWO yellows for this dessert! I highly recommend Halo Top, I had previously tried Arctic Zero brand and wasn’t a huge fan. I think Halo Top has alot more flavor!
OMG you guys, the MOST AMAZING thing happened this week! THEE JAMIE EASON commented on my instagram post. Apparently she follows me (WHAT THE WHAT?!) and she commented on my meal prep post! THEN we proceeded to talk about babies and fitness (shes pregnant with her second) it felt like I was talking to a friend!! In other exciting news, Annabelle and I did a Home Depot Kids Workshop this past weekend! It was FREE and so adorable! All the kids get little mini aprons with their names on it and you build a project. This weekend it was a mini red wagon, now Annabelle was much more interested in running down the aisles so I had to do the project and let her reap the rewards LOL But it was so fun! They do these workshops once a month and I highly recommend taking your kiddos to your local Home Depot!
Alright guys, officially two months, so it was time for more progress pics. Not going to lie, every time I feel like whats the point? I don’t look any different AND THEN I am pleasantly surprised! In just eight weeks I am down 10 lbs, 22 inches and I have made some AMAZING habits! I am running 3 days a week and doing 21 day fix at home workouts 3 days a week. I am tracking all my food with My Fitness Pal and most of all I am learning to make myself a priority again. It feels really good to be back on track and starting to see some progress! OH and my big 9 mile race is this next week! EEEEKK it’s crazy BUT I know I can do it, because I did 11 miles the other week.
