Quest Bar – Pop Tart

You may or may not share my obsession with Quest Bars! I discovered them a while ago and at first I was like okay they are pretty good but THEN I got on Pinterest and saw that people BAKE with them!! They make cereal, cookies, pies, YOU NAME IT and you can create it with a quest bar! OMG I was blown away, I saw why people were freaking out over their high protein / tasty treats!

BUT then the internet flipped when Quest changed their recipe! People starting protesting (okay maybe I made that part up), but seriously people were mad. And guess what Quest did?! They CHANGED their formula BACK (with improvements) and THEN offered FREE quest bars for their customers to try?! WHAT? Who does that? Talk about amazing customer service.


So I was eager / skeptical to try the new & improved flavors, because I tended to agree with the people. I thought the old bars were much better. Well guess what, the new are ones are EVEN BETTER!! So I of course had to whip up a tasty treat with them! Let me introduce you to the Quest Bar Poptart that will blow your mind!

It’s kind of ridiculous how excited I got to make this! But I grew up on “pop tarts” and couldn’t wait to put a healthy spin on it.


Now let me say I considered this a “treat swap” doing the 21 day fix, I counted it as 1 red and 1 yellow. Also if you are counting calories (& want to save them) you could do Peanut Butter 2 (powdered peanut butter) instead of regular peanut butter.

I think what’s so great about this recipe is the bar alone is good, but throw some peanut butter and chocolate on there and its like INSANELY delicious!! It really does feel like a cheat!

Quest Bar Pop Tart 

Take 1 quest bar (any flavor) microwave for 10 seconds then roll it out flat, slice it into two parts.
Using your hands mold each piece into a square.

Next Create the filling / topping by mixing 2 TB of peanut butter, 1 TB of honey, 2 TB of coco powder.

Take one half of your bar & spoon some of the filling on top. Then place the other half over it. Using a fork crimp the edges. Bake at 350 for 8 minutes.

Remove from oven & let cool. Top with more icing & then optional Greek yogurt drizzle.

    I made quest bar s’mores the other day – microwave for 10 seconds, form into 4 small squares. top each square with a marshmallow and some chocolate chips. Heat again (i microwaved, oven would have been amazing though). Cool and smash 2 together like real life s’mores.
    Tonight’s yellow swap will consist of a quest “pop tart” for sure!
