It’s been forever and a day since I’ve posted a recipe on here guys! But don’t worry I’m still cooking and plugging along with my 21 day fix meals and recipes! This Shrimp and Caramelized Onion Stuffed Spaghetti Squash is one of my FAVES! I hear people say they get bored eating healthy, and my answer is, you’re cooking the wrong foods 😉 I like to mix it up and try new recipes and come up with healthy substitutes!
Spaghetti Squash is an AWESOME veggie! It is full of Vitamin A, Vitamin C, has about 42 calories in one serving, and also has a good amount of fiber. BONUS, if you are doing the 21 day fix OR a low carb diet, then its great to save your (yellows) and still get that “pasta feeling.” Now it has a different texture than traditional spaghetti, its more like a slightly crunchy angel hair pasta, if that doesn’t sound good, then ignore my description and try it anyway! This is a great way to get your kids to eat more veggies too! Annabelle LOVES spaghetti squash!
1 spaghetti squash
*MUST say spaghetti squash, not just yellow squash
1 lb of raw shrimp (peeled and deveined)
half a cup of mozzarella cheese
blue cheese crumbles *optional
green onions for garnish
Cut your spaghetti squash in half, sprinkle a little olive oil & garlic powder. Bake at 400 for 45 minutes. Let cool. While that’s cooking Carmelize your onions. On medium heat add a teaspoon of olive oil, add your sliced onions, then BE PATIENT ? You will want to give them a stir about every 5 minutes for about 45 minutes, until carmelized. Then add just a little chicken broth to deglaze the pan, push the onions aside. To the same pan add your raw shrimp, season with a little garlic powder & Mrs Dash. Cook the shrimp for about 5-7 minutes. Then add a little more chicken broth to deglaze it one more time. Then go back to your squash, use a fork to get the squash out, just push it all to the middle of your “squash shell” Next add your onions & shrimp on top of your squash, top with mozzarella cheese & optional blue cheese crumbles, broil on high for 5 minutes until cheese is bubbly!
It’s a little time consuming but OMG it’s seriously worth it!! Felt like a cheat meal! If you are doing the 21 day fix workout program, this equals out to 1 green, 1 red, 1 blue 🙂
