21 Day Fix Baked Tacos

This is by far one of my favorite 21 day fix recipes! I’m finally past the first trimester morning sickness so I am able to cook again 😉 And I’ve been craving tacos like crazy, so I make this at least once a week.

You can also add your own twist on this recipe, if you wanted to do ground turkey instead of chicken you could. AND you could even add more sautéed veggies like onions and mushrooms with the meat too! It’s totally up to you.

Baked Chicken Tacos
Ingredients:

-3 Chicken Breasts (diced)
-1 tsp of olive oil
-1 can of diced tomatoes or 1 jar of salsa
-1 packet of low sodium taco seasoning
-1 Box of Taco Shells
– Mexican Shredded Cheese
-TOP tacos with Spinach OR lettuce

Steps:
1. Preheat your oven to 375. 2. Heat a medium sauce pan or cast iron skillet over medium heat, add 1 tsp of olive oil. 3.Add your diced chicken and cook for 10-12 minutes or until cooked through, add your salsa or diced tomatoes, taco seasoning, stir together and simmer for 10 minutes. 4. Spray a glass baking dish with nonstick spray, and then fill your shells with the chicken / salsa mixture. IF you are using 21 day fix containers, then use your green container to measure the taco filling. 5. Top each taco with cheese (blue container to measure). 6. Bake at 375 for 10-15 minutes until cheese is melted and bubbly. 7. Top with shredded lettuce or spinach.


21 day fix Container count:

Two Tacos counts as 1 yellow, 1 red, 1 blue, 1 green.
When assembling my tacos, I used my GREEN container to measure the chicken / salsa mixture (counts as one red for the chicken), the blue container to measure the cheese, and then top with a green container of spinach or lettuce. I used my green container to measure the meat / salsa mixture because there is veggies mixed in there too but you could just use your RED container to measure the meat.

    Can you tell me how many tacos this made in total? I have to meal plan for a family of 6 so I just wanted to know if I need to double, triple, etc…thank you!! Sounds simple and delicious!

    Why do you use the green container to measure instead of the red?

      because they have salsa and some other veggies mixed into the meat, I used the green. But just the chicken itself counts as one red.

    I love that you mentioned you were back to cooking again, now that you are past the first trimester. I am in my 8th week of pregnancy and it is so tough to actually eat to an eating plan. Some days I cans stomach meat, some days it is vegetables. It has been the toughest pregnancy for me of three.
    Is it alright to continue with 21 day fix throughout your pregnancy? Workouts and meal plans?
