Baked Chicken Parmesan {Recipe}

So you guys, I have so much to tell you about these past couple of months, having TWO kids now?! My VBAC birth story from Adelaide, my Weightloss Milestone {losing the baby weight} but let’s just start with some yummy food. Now that I’m a busy mom of two girls, its all about easy and QUICK dinner meals. I love me some pasta, but sometimes it gets a little boring by itself, so I pair it with this Baked Chicken Parmesan.


PS Health Tip #1 – Sneak some veggies into your pasta! One thing I do when we eat pasta is usually steam some veggies and separate into two bowls. One bowl I process with about 1/4th of water until its pureed, then I add it into the sauce. Next I take the second bowl of broccoli and add it to the cooked pasta and pour the sauce over it. Its a great way to get extra veggies in and your kids won’t even know it.

Annabelle just turned three and somewhere between 1 and two she realized that she didnt like veggies anymore and goldfish where the only acceptable food group. SO I know a thing or two about trying to get picky eaters to eat veggies. She also LOVES to cook, so she usually pulls up a stool and joins me in the kitchen, and being a part of the cooking usually makes her want to eat what she cooked.

And Health Tip #2- Bake your chicken instead of frying it. This will lighten up the meal and be a healthier
option than fried chicken.


Baked Chicken Parmesan
-4 Chicken Breast (sliced in half to make 8)
-3/4 cup of seasoned bread crumbs
-1/4 cup of parmesan cheese
-2 TB of olive oil
-3/4 cup of reduced fat mozzarella cheese (shredded)
-1 cup of Marinara (I like Newmans Own Organic)
**Optional half a cup of steamed broccoli to add to your sauce

#1- Preheat your oven to 450 degrees {Note: I have also done this at 400 degrees and just added 5 minutes to the cook time)
#2-Combine your breadcrumbs and parmesan cheese in a bowl. Brush your olive oil onto each chicken slice and then dip into the breadcrumb mixture. Lay each chicken flat on a baking sheet.
#4-Lightly spray with olive oil (so the tops get golden brown) and bake at 450 for 25-30 minutes. Now if you use thicker slices of chicken, you will want to increase your baking time.
#5-Remove chicken from oven and spread one spoonful of marinara sauce onto each top.
Sprinkle with a handful of mozzarella cheese and BROIL for 2-3 minutes until the cheese is bubbly.

VOILA Easy week night meal, you can eat it with pasta or with just steamed veggies.
