Baked Chicken Parmesan {Recipe}

So you guys, I have so much to tell you about these past couple of months, having TWO kids now?! My VBAC birth story from Adelaide, my Weightloss Milestone {losing the baby weight} but let’s just start with some yummy food. Now that I’m a busy mom of two girls, its all about easy and QUICK dinner meals. I love me some pasta, but sometimes it gets a little boring by itself, so I pair it with this Baked Chicken Parmesan.

Blueberry Muffins {21 Day Fix Approved}

So I posted on my facebook page asking if people wanted my Banana Muffin Recipe or Blueberry Muffin recipe FIRST and HANDS DOWN blueberry was the winner! I am on my third week of my 21 day fix challenge group (at 7.5 months pregnant), so I am trying new recipes that Annabelle and David will like too! These are great as a breakfast on the go or a mid morning snack.

These blueberry muffins are so delicious and moist! If you are making a batch I recommend storing them in tupperware in the fridge if you don’t plan on eating them all right away 🙂 You can also freeze some in a ziplock baggie then just heat in the microwave for 10-15 seconds. Recipe makes 9-12 muffins.

Blueberry Oat Muffins
-1 Cup of PLAIN greek yogurt
-2 ripe bananas (mashed)
-2 eggs
-half cup of oats
-1 cup of Oat Flour (Can also use a food processor to break down 1 cup of oats, if you don’t have oat flour on hand)
-2 TB of raw honey
-1&half tsp of baking powder
-1/2 tsp of salt
-2 cups of blueberries
**IF mixture is TOO dry, you can add water or almond milk in small spoonfuls until its a thinner consistency. 

Preheat your oven to 350 degrees. You will need to mash your bananas first OR throw them in a blender to get them smooth (I used a fork to mash mine.) In a large bowl, mix all the ingredients EXCEPT for the blueberries. Using muffin liners (I used silicone baking liners from Amazon) spoon your mixture into each cup until its 3/4th of the way full. Next add a small handful of the blueberries to each muffin tin. Bake at 350 degrees for 25-30 minutes until they are cooked through, let cool for 10 minutes. Recipe makes 9-12 muffins.

21 Day Fix Container Count:
One muffin counts as 1 yellow, half purple, half blue.
IF you add MORE blueberries to your batch then you will need to adjust your purple container amount.

Spinach, Feta & Bacon Egg Cups {21 day fix}

So I’ve had people ask me if I have been getting any pregnancy cravings lately? And honestly with Annabelle I NEVER had any! I was so disappointed, I really wanted to crave ice-cream and pickles. But with my current pregnancy the ONLY craving I have had is pickles (by themselves) AND a crazy instant craving when something pops into my head. This morning I opened the refrigerator and got a smell of bacon and I had to have it LIKE RIGHT NOW.

So I whipped up these spinach, feta and bacon egg cups. They are great for a grab and go breakfast and can easily be reheated and stored.

I added spinach and feta to mine, but you could easily add any veggies you would like.

You can also make these ahead for meal prep, I would store up to 6 in the fridge and then freeze the rest. Just pop in the microwave for 30 seconds before serving.

Spinach, Feta and Bacon Cups
*Makes 6 egg cups (can double the recipe to make 12)
-5 eggs
-6 slices of bacon (or turkey bacon)
-handful of spinach
-handful of feta cheese
**Use your 21 day fix containers to measure the spinach and feta

1. Spray a muffin tin with non stick spray.
2. Wrap each slice of bacon in a circle and place in each individual hole.
3. Bake JUST the bacon at 400 for 10-12 minutes (You don’t want to cook it all the way)
4. In a bowl add your eggs and mix with a fork.
5.Once bacon timer is done, remove from oven and let cool.
IF your cups are filled with bacon grease you can discard the grease.
6.Making sure the bacon stays wrap, fill each bacon hole with the egg mixture, until halfway through.
7.Next add your diced spinach & feta crumbles to each cup.
8.Bake at 400 for 10-12 minutes or until eggs are cooked through and bacon is crispy.

21 day fix container count:
One egg cup counts as two red, .5 green and .5 blue, You can easily adjust the container count by measuring out and adding more or less veggies. You could also do turkey bacon instead of regular bacon (I didn’t have any on hand).
