Tilapia & Quinoa Cakes {Clean Eating}

So I LOVE some crab cakes, but sometimes it’s hard to find fresh crab AND find a healthy recipe! So I improvised and came up with a healthy Tilapia and Quinoa crab recipe! Its super easy and so delish!

Tilapia & Quinoa Cakes
Ingredients:
-3 tilapia filets (raw)
-1 cup of COOKED quinoa
– One clove of sliced garlic
-herbs for seasoning, I used oregano and basil (chopped small)
-feta for topping
-greek yogurt
-buffalo sauce *optional for topping

Steps:
Sautee your tilapia filets on Medium heat for 2-3 minutes each side.
Once your tilpia is cooked, shred it either by hand or with a fork and add your cooked quinoa in a large bowl. I usually make a batch of quinoa each week to use for cooking! Can be a great bread crumb substitute. NEXT add your seasonings. Stir everything together and form patties. Place on baking sheet and bake for 15 minutes at 400 or until brown. I usually broil for about 2-3 minutes at the end, so they are a little crispy.

*optional:
I like to top mine with a buffalo / greek yogurt and feta sauce. I just take 2 tb of greek yogurt mix with 1 teaspoon of buffalo sauce, and some italian herbs. I add a little water to thin it out. Once your cakes are cooked through. I place them on some spinach and top with the sauce and add some crumbled feta! Makes a delicious appetizer or entree!
